Moroccan Chicken Couscous


This taste sensation can be pulled together in minutes!


In a saucepan pour one cup of boiling water over 1 cupof couscous. Cover and allow the couscous to swell for 5 minutes.

Assemble all the salad & vegetable ingredients in a large bowl.

make dressing by adding olive oil to lemon juice, lemon zest, garlic, salt and pepper.

Mix couscous, salad and dressing in a bowl. Finally, fold in Greene Farm Moroccan Spiced Chicken Breast. This salad can be made in advance-after a few hours the flavours will settle into a glorious dish.




1 pack of Greene Farm Moroccan Spiced Chicken Breast
1 cup of couscous
60g garden peas
1 red pepper diced
½ red onion chopped
2 spring onions finely sliced
5g chopped parsley
5g chopped mint


Juice & zest of 1 lemon
2 cloves crushed garlic
Pinch of salt &
a twist of pepper
