Asian Beef Noodle Salad
This recipe is GLUTEN FREE.
Ingredients (for 2 servings):
1 packet Greene Farm Hand Prepared Beef Slices, cut into strips
200g rice noodles
2 Persian cucumbers
2 small carrots
2/3 spring onions, chopped
For the Asian dressing:
1 garlic clove, crushed
½ red chilli, deseeded and finely chopped
2 tsp honey
2 tbsp fish sauce
Juice of 1 lime
1 tbsp crushed peanuts
Cook the noodles according to package instructions. Drain, rinse and set aside.
Make the dressing: place all the ingredients in a small bowl and mix.
Slice the carrots, cucumbers and radishes using a mandoline.
Transfer the noodles to a large mixing bowl. Add the vegetables, Greene Farm Hand Prepared Beef Slices, spring onions and pour the dressing. Toss to combine.
Divide into two salad plates, top with crushed peanuts and enjoy.
